Coffee Buttercream Frosting (modified from a recipe that appeared in People Magazine)
Makes about 3 cups of frosting
  • 1 cup unsalted butter, softened
  • 4 cups confectioners' sugar, sifted
  • 3 tsp vanilla extract
  • 3-4 TBSP milk
  • 4 tsp instant coffee powder
  1. Cream room temperature butter with a hand mixer, the paddle attachment of a stand mixer, or a wooden spoon until smooth and fluffy. Gradually beat in confectioners' sugar until fully incorporated. Beat in vanilla extract. Pour in milk and beat for an additional 3-4 minutes. Add in the coffee powder and beat for another minute or two.
